(16) Watermelon Cubes
(16) Fresh Mint Leaves
8oz. Feta Cheese, cube
(16) Yellow Cherry Tomatoes (or red, or mixed, but love the yellow)
Balsamic Glaze (see recipe below)
1 Tbl Olive Oil
1 Tsp Kosher Salt
1/2 Tsp Ground Pepper
16 3-inch wooden skewers

Directions
Start with watermelon cubes, then mint leaf, feta cube and tomato. Once all skewers are done, drizzle with balsamic glaze and olive oil. Salt and pepper to taste.
Balsamic Glaze
Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and drizzle on skewers.
