Ingredients

3 med carrots, sliced
1 med onion, chopped
2 celery ribs, sliced
1 red pepper (or orange or green), chopped3 cups water
3 cups vegetable broth1 cup dried lentils, rinsed
1/4 cup uncooked brown rice
1 tsp dried basil
1 garlic clove, minced
1 bay leaf
3/4 cup tomato paste
1/2 cup frozen corn
1/2 cup frozen peas

Full of great veggies from the garden, this delicious lentil soup is super easy.

Directions

Add the first 4 ingredients and splash of oil into the pot. Sear/Saute until veggies are fragrant. Add all other ingredients. Pressure cook on high for 55 minutes. Quick-release.
