Healthy and about 300 calories a serving!
Ingredients
28 oz crushed tomatoes
3 cups chicken stock
Homemade Taco seasoning
16 oz kidney beans, drained
15.5 oz black beans, drained
11 oz corn
1 pound chicken breasts (boneless, skinless), raw
Directions
Mix all ingredients together in a crock pot and cook on low for 5 hours.
At the end of the cooking time, remove the chicken from the crock pot, shred and return to the soup. Serve topped with sour cream and shredded cheese. You can also add a little cilantro or avocado. If calories don’t matter add some cut-up corn tortillas the last 10 minutes of cooking.
