Ingredients
20 Eggs
1 Cup Flour
2 Pt (32oz) Cottage Cheese
1 Cup Butter (melted)
1 Tsp Salt
1 Tsp Pepper
1 Tsp Garlic-type Seasoning
2 Tsp Baking Powder
2 lb Jack Cheese-Shredded (or Chedder, or 3-Mexican or …)
4 cans 4-oz diced green chiles (or 2 cans)
Directions
Beat eggs with mixer until light and lemon-colored. Add flour, baking powder, salt, spice, pepper and butter. Mix in Cottage Cheese, Jack cheese, blend smoothly. Stir in chiles.
Bake at 350 for about 40 minutes or until top is browned and center appears firm. Let cool slightly before cutting. Makes about 25 servings.
