1/2 cup slivered almonds
2 cups water
2/3 cup diced dates
1/3 cup chopped dried apricots
1 tsp ground cardamom
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 Tbl oil
10oz Couscous (I use Israeli Couscous)
Ingredients
Cinnamon is such an amazing spice in savory dishes like couscous. I highly prefer Israeli Couscous for its larger size and texture.
Directions
Preheat oven 350F
Toast almonds on a baking sheet for 10 minutes until golden
Combine water, dates, apricots, oil and spices in a medium saucepan. Cover and bring to boil. Add couscous and stir well. Cover and remove from heat. Let the couscous sit for 5 minutes. Stir in almonds. Serve immediately.
