4 boneless center-cut loin pork chops. If you can find country cut – do it!
3/4 tsp salt
1/2 tsp black pepper
2 Tbl fig jam
1/2 cup water
1 lb trimmed green beans
2 Tbl grated Parmesan cheese

If I’ve perfected one thing, it’s cooking pork chops that are not dry and tasteless.
Directions
Preheat oven 350F
Spray a frying pan, griddle or cast-iron pan with non-stick spray. Sprinkle pork with salt and pepper. Once pan is very hot, sear for 2-3 minutes each side. Top chops evenly with jam. Place the entire pan in pre-heated oven for 10 minutes depending on thickness of chops.
Meanwhile, bring the water to boil in a large skillet. Add beans, cover and cook until beans are tender-crisp – about 5 minutes. Drain and toss with parmesan cheese, salt and pepper.
