1/4 cup lemon juice
1/4 cup honey
2 Tbl soy sauce
1 Tbl unsweetened apple juice, or sherry
2 garlic cloves, minced
4 boneless pork chops – preferably thick
Ingredients
Once spring and summer come around, these are perfect for a relaxed and casual meal. Also, great on the grill!
Directions
Combine ingredients in a small bowl. Pour 1/2 cup in a ziplock bag; add pork chops. Seal bag and turn to coat; refrigerate 2-4 hours (or more). Cover and refrigerate the remaining marinade for basting.
This is the BEST way to cook pork chops and have them not come out dry. Preheat oven 375F.
Use a frying pan or griddle. A cast-iron pan is great as well. Oil the pan with a bit of olive or avocado oil. Heat the pan and sear the pork on each side for 2-3 minutes only. Baste with the remaining marinade. Place in oven for 10-15 minutes depending on the thickness of chops. Remove, rest for a few minutes and serve.
