Ingredients:
1/2 cup (1 stick) plus 6 Tbsp Butter, softened
3/4 cup firmly packed brown sugar
1/2 cup sugar (I replace with Agave syrup)
2 eggs (or bananas)
1 tsp vanilla
1-1/2 cup whole wheat or unbleached flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
3 cups old fashioned Quaker Oats, uncoooked
1 cup raisins
1/2 cup coconut
Directions:
Heat oven 350F
Beat Butter and sugars until creamy
Add eggs and vanilla
In a separate bowl combine flour, baking soda, cinnamon and salt, mix well …. add to butter/sugar mixture
Add oats, raisins, coconut
Drop by rounded tbsp onto ungreased cookie sheet
Bake 8-10 minutes, cool 1-2 minutes, then move to cooling rack
