Ingredients

1/2 cup of coconut milk
1 Tbl packed light brown sugar
Pinch salt
1 3/4 cup cooked brown rice
1 large Mango, peeled, pitted, sliced
4 tsp chopped pistachio or cashews

Directions

Combine coconut milk, brown sugar and salt in a medium saucepan. Bring to boil over medium-high heat. Add rice and return to boil. Cook, stirring constantly until most of the liquid is absorbed, about 3 minutes.

Divide rice evenly among 4 serving bowls; arrange mango slices evenly around rice. Sprinkle with nuts. Serve at once.
